Yesterday I drove to Innaminka S.A. to take one of the ringers to visit the flying doctor. The trip was very scenic, and Innaminka was an interesting little town, consisting of a pub and service station and accomadation, and very friendly people.This image was taken just after we crossed the S.A boarder back into Qld.

Lamington recipe
Lamington Recipe – very easy and delicious.
Cake
- 1/2 cup butter
- 3 eggs
- pinch salt
- 1 teaspoon Vanilla
- 3/4 cup caster suger
- 1 1/2 cup self raising flour
- 1/2 cup milk
Icing
- 2 cups icing sugar
- 1 big tablespoon butter
- 1/3 cup cocoa
- 1 teaspoon vanilla
- Hot water to make a very runny icing
- 3 cups coconut
Cake : cream butter and sugar,then beat in eggs and vanilla.
gradually mix in flour and milk, pour into lamington tin (rectangle) bake in moderate oven for 30 min.
Icing: mix all ingredients with hot water to thin runny icing.
cut cake into square, coat well in watery icing and then cover with coconut.this bit is a bit fiddly I use a fork.
Then enjoy I make a double mixture and you can freeze some.
