Lamington recipe
Lamington Recipe – very easy and delicious.
Cake
- 1/2 cup butter
- 3 eggs
- pinch salt
- 1 teaspoon Vanilla
- 3/4 cup caster suger
- 1 1/2 cup self raising flour
- 1/2 cup milk
Icing
- 2 cups icing sugar
- 1 big tablespoon butter
- 1/3 cup cocoa
- 1 teaspoon vanilla
- Hot water to make a very runny icing
- 3 cups coconut
Cake : cream butter and sugar,then beat in eggs and vanilla.
gradually mix in flour and milk, pour into lamington tin (rectangle) bake in moderate oven for 30 min.
Icing: mix all ingredients with hot water to thin runny icing.
cut cake into square, coat well in watery icing and then cover with coconut.this bit is a bit fiddly I use a fork.
Then enjoy I make a double mixture and you can freeze some.
Delicious Moist Lamingtons
Corn flake Biscuits Recipe, Easy as!
Beat 4 oz butter, and 4 oz sugar together till creamy.
Add 8 oz S.R. flour and 1 egg and a dash of vanilla.
mix with woodern spoon to form stiff dough.Roll mixture into small balls then roll in crushed cornflakes. Bake for approx 12 min in oven 160 – 180 c.
Enjoy. Simple and yummy, they love them here.
Chocolate Fudge Slice Recipe.
Chocolate fudge slice recipe:
Base:
1 cup plain flour, 1/2 cup sugar, 1 cup coconut, 1 tablespoon cocoa, 185 g butter
1/2 teaspoon vanilla
Chocolate icing:
1 cup icing sugar, 2 tablespoons cocoa, 30 g butter,
1 1/2 tablespoon hot water.
Base:
sift dry ingredients into a bowl,add melted butter and vanilla, mix well. Press mixture over base of greased 11 inch x 7 inch lamington tin. Bake in moderate oven for 20 minutes . Cool in tin. When cold ice with chocolate icing, sprinkle with coconut. Cut into bars when icing has set.
Chocolate Icing: sift icing sugar and cocoa into small bowl, ass melted butter and hot water, mix until icing is smooth and glossy.

Today I have baked imposible pie and coffee and caramel slice.
Im certainly no gourmet chef but they havent complained yet. People that know me, are amazed that im cooking…me too
I have also cooked silverside, thats from scratch from making the salty brine to cooking. What a learning experience.
I love to learn and Im certainly doing that out here.
